Austin and I are all about convenience.  Between his school schedule and me starting a new teaching position, cooking dinner is the last thing we want to do.  But meal planning at the beginning of the week certainly makes dinner time much easier.  We usually try to incorporate a crock-pot meal or two!

 

Tonight we made crock-pot jambalaya!  It did require some chopping of vegetables, but other than that, it was super easy!
